From a young age, Marcio Florez felt a deep connection to Peruvian cuisine, inspired by the flavors and traditions that surrounded him. Determined to follow his passion, he studied culinary arts in Nashville, where he refined his skills and embraced the vibrant flavors of his heritage.

After gaining experience in some of the city’s top fine dining restaurants, Marcio set out to bring the true taste of Peru to the local community through his own food truck. Thanks to his dedication, perseverance, and love for cooking, it quickly became a favorite among Nashvillians.

Today, as Executive Chef and founder of Limo Peruvian Eatery in East Nashville, Marcio continues to share the richness of authentic Peruvian cuisine — working every day with passion, love, and commitment, inspired by his family, who remain his greatest motivation and driving force.

Ají Limón (Ají Limo) – The Heartbeat of Peruvian Heat

As a chef, I always say that ají limo is more than just a chili — it’s the soul of Peru’s coastal cuisine. This vibrant pepper, typically red, yellow, or purple, brings a citrusy aroma and intense heat that ignites the palate. It's a staple in traditional ceviche, adding not only spice but a bold, fresh flavor that balances the acidity of lime and the sweetness of red onions. Native to northern Peru, ají limo is a key ingredient I trust when I want to bring authentic Peruvian fire and depth to a dish.

The Torito de Pucará
(Little Bull of Pucará) is a traditional Andean ceramic figure from the Pucará region in the Puno highlands of southern Peru. It holds deep cultural and spiritual meaning in Peruvian folklore, especially among Quechua communities.

is a majestic symbol of Inca culture, an ancient citadel built around the 15th century. It represents the harmony between nature, spirituality, and advanced engineering.
